More than the owners of the farm we are the trustees of the vineyards that our grandparents left us and that we one day will leave to our grandchildren. We are the living thread and trustees of Tradition! This is the reason why our wines are done (made?) traditionally. The grapes are harvested by hand, they are selected and then they are trampled in a granite mill to extract the maximum of grape must (tirar?) without crushing the seed to avoid a bitter taste in the final product. After fermenting the wine is kept in some (tirar ?) oak barrels to age properly and to develop some new flavours such as vanilla, nutty and coffee.
Heritage
We always want to do the best by employing what nature and tradition allow us. We are extremely exigent (demanding/thorough ?) and respectful of our past, heritage and traditions. Our mission is to improve the process without destroying the traditions and heritage left by our ancestors. We modernized the methods without destroying the vineyards left by our ancestors, that allows (us to keep/ maintain) keeping the landscape unchanged through(out) the centuries.
Sustainability
We aim to use sustainable practices once we believe that the truth belongs to the earth!
We believe that to get a good product we need to allow nature to take his (its) course. To do this we use a system of integrated protection in our vineyards to be closer to nature(‘s) work. We let nature take his (its) course and we only help the vineyards to produce the best grapes possible. Each year we wonder how we can create the best wine without interfering with nature. This is the reason why we only use our grapes to produce our wines.
Our wines are produced in an old fashion way through a mix of different type of traditional grapes (Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca, Tinto Cão) to get the best from the land.
